Roasted vegetable dish
Ingredients:
- 1 sweet potato, cubed
- 2 carrots, sliced
- 1 red onion, coarsely chopped
- 1 red pepper, in strips
- 1 zucchini, sliced
- 1 broccoli, in small florets
- 3 tablespoons of olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Preparation:
- Preheat the oven to 200 degrees Celsius.
- Mix all the chopped vegetables in a large bowl.
- In a separate bowl, mix the olive oil, garlic, thyme, salt and pepper.
- Pour the oil-spice mixture over the vegetables and mix well so that all vegetables are evenly coated.
- Spread the vegetables evenly on a baking tray lined with baking paper.
- Roast the vegetables in the preheated oven for about 25-30 minutes, or until tender and lightly browned. Halfway through the baking time you can carefully stir the vegetables.
- Optional: Sprinkle with grated Parmesan cheese before serving.
