Roasted vegetable dish

Ingredients:

  • 1 sweet potato, cubed
  • 2 carrots, sliced
  • 1 red onion, coarsely chopped
  • 1 red pepper, in strips
  • 1 zucchini, sliced
  • 1 broccoli, in small florets
  • 3 tablespoons of olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Preparation:

  1. Preheat the oven to 200 degrees Celsius.
  2. Mix all the chopped vegetables in a large bowl.
  3. In a separate bowl, mix the olive oil, garlic, thyme, salt and pepper.
  4. Pour the oil-spice mixture over the vegetables and mix well so that all vegetables are evenly coated.
  5. Spread the vegetables evenly on a baking tray lined with baking paper.
  6. Roast the vegetables in the preheated oven for about 25-30 minutes, or until tender and lightly browned. Halfway through the baking time you can carefully stir the vegetables.
  7. Optional: Sprinkle with grated Parmesan cheese before serving.
