Vegetarian lentil soup

Ingredients:

  • 1 cup dried green or brown lentils, rinsed well
  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can (400 g) diced tomatoes
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika powder
  • 1 teaspoon turmeric
  • 1 liter vegetable stock
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Preparation:

  1. Heat the olive oil in a large stockpot over medium heat. Add the onion, carrots, celery and garlic. Fry them until they are soft.
  2. Add the tomato cubes, cumin powder, paprika powder and turmeric. Stir well.
  3. Add the lentils and vegetable stock. Bring to the boil and simmer until the lentils are tender (about 25-30 minutes).
  4. Season with salt and pepper to taste.
  5. Serve the soup warm, garnished with fresh parsley.
