Vegetarian lentil soup
Ingredients:
- 1 cup dried green or brown lentils, rinsed well
- 1 onion, finely chopped
- 2 carrots, sliced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 can (400 g) diced tomatoes
- 1 teaspoon cumin powder
- 1 teaspoon paprika powder
- 1 teaspoon turmeric
- 1 liter vegetable stock
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Preparation:
- Heat the olive oil in a large stockpot over medium heat. Add the onion, carrots, celery and garlic. Fry them until they are soft.
- Add the tomato cubes, cumin powder, paprika powder and turmeric. Stir well.
- Add the lentils and vegetable stock. Bring to the boil and simmer until the lentils are tender (about 25-30 minutes).
- Season with salt and pepper to taste.
- Serve the soup warm, garnished with fresh parsley.
