Quinoa salad with roasted vegetables
Ingredients:
- 1 cup quinoa, cooked according to package directions
- 1 zucchini, cut into cubes
- 1 red pepper, cut into strips
- 1 carrot, sliced
- 1 red onion, cut into thin rings
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 handful cherry tomatoes, halved
- 50 grams feta cheese, crumbled
- Fresh juice of 1 lemon
- A handful of fresh basil, finely chopped
Preparation:
- Preheat the oven to 200 degrees Celsius.
- Mix the zucchini, red pepper, carrot and red onion on a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper and oregano. Roast in the oven for 20-25 minutes or until the vegetables are tender and lightly browned.
- In a large bowl, mix the cooked quinoa with the roasted vegetables.
- Add the halved cherry tomatoes, crumbled feta, lemon juice and fresh basil. Mix everything together well.
- Season with salt and pepper if necessary.
- Serve hot or cold.
