Quinoa salad with roasted vegetables

Ingredients:
  • 1 cup quinoa, cooked according to package directions
  • 1 zucchini, cut into cubes
  • 1 red pepper, cut into strips
  • 1 carrot, sliced
  • 1 red onion, cut into thin rings
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 handful cherry tomatoes, halved
  • 50 grams feta cheese, crumbled
  • Fresh juice of 1 lemon
  • A handful of fresh basil, finely chopped
Preparation:
  1. Preheat the oven to 200 degrees Celsius.
  2. Mix the zucchini, red pepper, carrot and red onion on a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper and oregano. Roast in the oven for 20-25 minutes or until the vegetables are tender and lightly browned.
  3. In a large bowl, mix the cooked quinoa with the roasted vegetables.
  4. Add the halved cherry tomatoes, crumbled feta, lemon juice and fresh basil. Mix everything together well.
  5. Season with salt and pepper if necessary.
  6. Serve hot or cold.
